Lunch just leveled up π€€ π Ingredients Crispy Chicken: * 4 chicken breasts * 1 cup all-purpose flour (120g) * Salt, black pepper, garlic powder, onion powder, smoked paprika, Italian seasoning, chili powder (to taste) * 2 eggs * 2β3 tbsp heavy cream * 1β2 tbsp pickle juice * 1Β½ cups panko breadcrumbs (90g) * 2β3 tbsp grated Parmesan (optional) * Oil, for frying Caesar Dressing: * 1 cup mayo (240g) * Β½ cup finely grated Parmesan (50g) * 2β3 garlic cloves, minced * 2 tbsp lemon juice * 1 tbsp Dijon mustard * 1 tsp Worcestershire sauce * Β½ tsp salt * Β½ tsp black pepper * ΒΌ cup olive oil * 2β4 tbsp water, to thin if needed To Assemble: * Large flour tortillas * Romaine lettuce, chopped * Extra Parmesan, for serving π©βπ³ Directions 1. Season the chicken generously with all spices 2. Set up a dredging station: seasoned flour in one bowl, whisked eggs + heavy cream + pickle juice in a second bowl, and panko + Parmesan in a third 3. Coat each chicken piece in flour, then the egg mixture, then press firmly into the panko until fully coated 4. Let the breaded chicken rest for 5β10 minutes so the coating sticks 5. Fry in oil over medium heat for 4β5 minutes per side until golden and cooked through 6. Remove and let drain on a rack or paper towel 7. For the dressing, whisk together mayo, Parmesan, garlic, lemon juice, Dijon, Worcestershire, salt, and pepper 8. Slowly whisk in olive oil, then add water until smooth and pourable 9.
