Tereyağını bu şekilde parça parça ekleyerek yoğurmaya devam edelim. 10 dakika dinlendirip tekrar yoğuralım. Hamuru pürüzsüz, yuvarlak bir beze haline getirip üzerini kapatalım ve mayalanmaya bırakalım. Hamur kabarınca 10 eşit parçaya bölelim. Her birini pürüzsüz ve gergin bezeler haline getirelim. (İyi beze yapmak çok önemli.) Kare şeklinde yağlı kağıtlar keselim ve bezeleri üzerine yerleştirelim. Bu aşamada altlarını hafif una bulayın. Bezelerin üzerine elimizle hafif bastırarak yassılaştıralım ve 15–20 dakika daha mayalandıralım. Tavaya yaklaşık 3 parmak yüksekliğinde sıvı yağ ekleyelim ve orta ateşte 3 dakika ısıtalım. Ardından ocağı orta-kısık seviyeye getirelim. (Yağa biraz un atıp küçük baloncuklar oluşuyorsa yağ hazırdır.) Mayalanan hamurları dikkatlice yağa alalım. Her iki tarafını da 2–3 dakika kızartalım.
