Chocolate Bomboloni
Makes 16
Soft Italian bomboloni filled with chocolate cream and coated in sugar.
Ingredients
450 g plain flour
7 g fast-action yeast
75 g caster sugar
25 g butter (softened)
2 large eggs
6 tbsp lukewarm milk
6 tbsp lukewarm water
3 g salt
Vegetable oil, for frying
Filling
Chocolate ganache or chocolate cream
Coating
100 g caster sugar

Method
Add all the dough ingredients into a large bowl and mix to form a soft dough. Knead until smooth and elastic.
Cover and leave to rise until doubled in size.
Divide into 16 equal pieces and shape into smooth balls.
Place on parchment squares and leave to rise again until puffy.
Heat oil in a deep pan and fry until golden brown on both sides. Drain well.
Roll in caster sugar while still warm.
Once slightly cooled, make a small hole in the side and fill with chocolate cream.
Serve fresh.
