BBQ Beef Sliders
Ingredients
* 3–4 lbs beef chuck
* Kosher salt, black pepper
* Avocado oil
* 1 cup beef broth
* 1 cup BBQ sauce
* 1 can (12 oz) Dr Pepper
* 2–3 tbsp butter
Dill Cream Sauce
* 1/2 cup sour cream
* 1/4 cup mayo
* 2–3 tbsp fresh dill, chopped
* 1 garlic clove, grated
* Juice of 1/2 lemon
* Black pepper
* Salt to taste
Cowboy Butter (for brushing)
* 4 tbsp melted butter
* 1 garlic clove, grated
* 1 tbsp chopped parsley
* 1 tsp lemon juice
* Pinch chili flakes
* Pinch salt
Assembly
* Slider buns (Hawaiian or potato)
Recipe
1. Season chuck aggressively with salt and pepper.
2. Sear in avocado oil until deeply browned on all sides.
3. Add beef broth, BBQ sauce, Dr Pepper, and butter (liquid ~3/4 up meat).
4. Cover and braise at 300°F for ~3 hours until fall-apart tender.
5. Remove beef, shred, then return to pot and toss in the sauce.
6. Mix sour cream, mayo, dill, garlic, lemon juice, salt, and pepper until smooth.
7. Stir together melted butter, garlic, parsley, lemon juice, chili flakes, and salt.
8. Toast slider buns until golden.
9. Spread dill cream on bottom buns.
10. Add shredded beef, top with habanero cheese, and broil until melted.
11. Finish with pickled jalapeños and crispy onion strings.
12. Close sliders, brush tops with cowboy butter.
